no-guilt recipe

if i have to describe this dish in one word, well sorry i just can't. finding this have been such a bless for me. i have had cough for more than 2 weeks now and it really sucks. i can't eat fried, santan, spicy food. i'm not a really disciplined person, see i ate few spicy and fried food in semarang which is why my cough is worse than ever that i had to go to the doctor twice this month. i am finally taking care of my throat by eating soup and non-fried santan and spicy food. but this recipe, i can't ignore this! it keeps bugging me so i decided to make it. but instead of covering the chicken breast with flour egg and breadcrumbs (yep just like chicken cordon bleu) , i just simply season it with salt and pepper and grill it. so no guilt for me nuh-uh!!

let's roll!

prepare your ingredients, and since i made this for myself, the recipe here is for one serving
1. tomato sauce
- 150 ml of crushed tomato (you can buy this at supermarket. i used Cirio)
- 1/4 onion, chopped
- 1 large clove of garlic, crushed
- 1 tbs brown sugar (i used gula merah i think it's the same thing..)
- salt and pepper

2. chicken
- 1 boneless skinless chicken breast
- salt and pepper

3. mozzarella and cheddar cheese

chop and crush that garlic and onion,
boom boom shake the room!
and since i used gula jawa yang gelondongan itu, i have to chop them so it dissolves easily.

heat up some oil, with medium heat. when it's hot, put in your garlic and onion.
leave em until the onion is soft, but not browned.
then pour your crushed tomato and brown sugar
boil, then lower the heat and simmer.
season with salt and pepper.

you know it's done when it's reduced.
take it off the stove and set aside.
the sauce should've been pureed but i like the consistency so i decided not to puree it.

now let's get to the chicken.
give it a little bang with your meat mallet.....or use your hand hahaha
season it well with salt and pepper

heat some olive oil, with low heat! why low heat? because if you use high heat for the chicken, the outside will be cooked but the inside is still raw and you'll end up burning the chicken.
with low heat, the breast will be cooked thoroughly.

put the cooked chicken in a plate. pour some (or a lot!) tomato sauce on top.
sprinkle grated mozzarella and cheddar (i only used mozz though) on top of sauce
and microwave it. uh.
okay truth is, the recipe tells me to put it into the kitchen so the cheese will melt beautifully.
but my mom said, just microwave it it's a lot easier.

TADAAAA!!!!!!!! it may not really good because i'm not really good at presentation but it tastes really good and the tomato sauce may look like store bought pasta sauce but it's whole lot better because you can adjust the taste to your liking, for example the sweetness and acidity. i am pretty sure if my mom made this, she will add few cabe rawit to the sauce!

you know what other good thing about this dish is? it's pretty healthy (i think so) i mean, chicken breasts, tomato sauce, and cheese (you may not use cheese if you're on diet), what's not to love?
